It's all about adaptation - find easily sourced, local ingredients to pull off a classic: Pulled

Here is a very simplified version of the classic Vietnemese sandwich, starting with a good quality Mayonnaise on the base of the baguette, adding the pulled pork, then layering an Asian 'slaw with grated carrot, cucumber, chopped fresh coriander & sweet chilli sauce and finishing with the all-important Hoi Sin sauce ...

Recipe for Pulled Pork

A slow roast is key to get the right flavour and consistency of this dish

Serves 6

1 cup smoked paprika

1 cup soft brown sugar

1 cup salt

2 kilos of pork shoulder

Preheat your oven to 150 degrees C, 300 degrees F or Gas mark 2.

Mix the dry rub together in a big bowl and coat the pork in it - ensuring that you cover all sides.

Put in a roasting tin and cook for 3-4 hours.

Cool overnight and using 2 forks, pull the meat apart into strips.
